Decadent Desserts

Let me start by stating the fact that I am not a dessert person. Until now. I think one of the main reasons is my family worked in chocolate, including my mom and my two aunts who also lived in our family home.

One of my aunts was a chocolate dipper and all the candy was made by hand by dipping her hands in a large sink of both milk and dark chocolates. She always smelled like chocolate no matter how much she washed. Mom and my other aunt did too.

So, when I turned 15 years old, I was recruited to work at the counter and pack the customers’ choice of candy, including cutting up large bars of solid chocolate based on the customer’s size preference. At first, I nibbled on the crumbs and then I stopped because I had more than my share of chocolate. I too started to smell like chocolate. I eventually quit. I have always rationalized that this was the main reason desserts did not appeal to me.

At birthdays, anniversaries, weddings, and all the events that are celebrated with cake, I had no desire to eat it and would politely decline or, in later years, share it with my husband by taking a bite.

So what has changed? Dessert at one of my favorite restaurants, Tradition Restaurant in Deerfield Beach. Chef Eric Heintz not only masters the French cuisine he serves in the restaurant but he has become a master of making the most delish and decadent desserts that are worth every calorie diners enjoy.

We dine there often and have to pace when we can order the occasional dessert, but it is really challenging. What we often do is get a dessert to go and ration the dessert over a few nights so we don’t overindulge. It is always the best the first day but most of the desserts are good for three nights. So, one dessert for two people on three nights is how we rationalize this indulgence.

The variety of the desserts differs depending on the fresh ingredients required and also when Chef Eric determines it is right for the night he is featuring on the menu or for the occasion.

In writing this article I was determined to select a favorite and have since decided it is not possible since we both like so many of them. Just when I think I have a favorite he will surprise us with something new.

I recommend you try these wonderful desserts and pick your own favorite, but I am sure you will also find this to be a challenge too.
